This vegan, grain free, and oil free tahini miso sauce is my absolute favorite vegetable dip, salad dressing, and general sauce because it is super simple and quick to make and is packed with a rich, creamy, nutty, and cheesy flavor! This tahini miso sauce is delicious with rice, beans, potatoes, breads, crackers, salads, and all vegetables; in fact, I have never eaten the sauce with anything that did not turn out to be a totally yummy combination!
In addition, once the base of the sauce is mixed together, it is completely up to the Cook how thin to make the final sauce. The apple cider vinegar, miso paste, and tahini form a very thick, spreadable consistency, but when water is mixed into the sauce, the sauce expands and the creaminess increases tremendously. Tahini seems to absorb water well, so you can add a couple of teaspoons for a thick dip or more than a cup of water for a thin, drizzle over your plate!
For the miso paste, I did not specify which kind of miso I used because that is a decision based upon taste preferences, or in my case, whatever kind I happen to have in the refrigerator. However, if you are avoiding soy, make sure to use a rice or chickpea based miso because traditional forms of miso paste are made from fermented soy.
