This Lemon Fudge recipe is great because it stays good in the fridge for two weeks, and in an airtight container in the freezer, it will stay good indefinitely!
Tart, creamy, and slightly sweet, my keto, vegan, and grain free Lemon Fudge recipe will quickly become a favorite of all lemon dessert lovers!
I used a regular bread pan to shape the Lemon Fudge as it hardens in the refrigerator, but individual candy molds could be used too. Feel free to experiment with serving shapes and sizes that work for you!
One thing that is important to note is the following: if left out of the refrigerator long enough to warm up to room temperature, the Lemon Fudge will soften to the point that it will not hold its shape. It is best to keep the Lemon Fudge chilled until serving!

- 1 cup unsweetened dessicated coconut
- 1 cup macadamia nut butter (can substitute cashew butter)
- ¼ cup extra virgin coconut oil
- 1 tsp vanilla extract
- 12-15 drop monk fruit extract
- 20-25 drops doTERRA Lemon essential oil
- Line a regular bread loaf pan with parchment paper.
- Add all ingredients to a food processor, and process until completely combined.
- Taste and add more doTERRA lemon essential oil or monk fruit extract to taste.
- Spread the lemon fudge in the bread pan and chill in the refrigerator until firm, about 1 hour.
- Slice into squares and serve immediately!
- Store leftovers in the refrigerator.
