Crunchy, Roasted Okra (Vegan, Oil Free, Grain Free, Low Lectin)

This recipe for Crunchy, Roasted Okra is the answer to fixing okra without it being slimy! In addition, this recipe is also oil free and grain free, unlike many other recipes for okra!
Recipe type: Side, Appetizer, Snack
Serves: about 2 cups
  • 1 pound fresh okra (or as much as you want)
  • *optional: salt and pepper to taste
  1. Preheat the oven to 450˚F, and line a baking sheet with parchment paper.
  2. Prepare the okra by washing and patting dry. If the okra is still wet, the chances of it being slimy increase!
  3. Next, snap off with your hands or cut the pointed ends off of all the okra off so that the remaining okra pieces are pretty similar in size from top to bottom.
  4. Then, slice the tops off the okra and chop the okra into two to three chunks, depending on the size of the okra.
  5. Place the okra on the prepared baking sheet (reference pictures in post if needed) and put the tray in the oven to bake.
  6. Roast the okra about 45 minutes or until it dries out and is crunchy. The finished okra should be crispy, like veggie chips or crisps.
  7. Serve immediately!
  8. Store any remaining okra in the fridge, but you may be surprised that there is never any okra left after dinner!
